How To Make Specialty Roll: Tofu Cucumber Roll: Cooked Ingredients

Ingredients for the tofu cucumber roll are: fried tofu and cucumber, with a topping of thinly sliced cucumber and carrot bits, and drizzled with teriyaki sauce.

The tofu is sliced lengthwise and with a height of about 1/4 inch, then pan fried in sesame oil and olive oil, equal amount of each in pan(about a tablespoon of each). Fry to coat the tofu about 3-4 mins per side. Sprinkle some roasted sesame seeds on the tofu.

You can slice the tofu before frying or just fry a larger piece and cut after it is cooked.(easier). You will need at least two slices to cover the length of the nora.
For the roll topping: the cucumber is sliced thinly and wrapped over the roll.

This roll has roasted sesame seeds also, so sprinkle them now over the rice, before the nora is flipped.

This roll has the rice on the outside so we must flip the nora once the rice has been added to it.
Flip over the nora so the rice is facing the bamboo mat, then add the fried tofu and cucumber, and drizzle teriyaki sauce on the tofu .

Roll the nora using the bamboo mat. This keeps the roll firm as you roll.

Add Toppings
Now, place the toppings on the roll - thinly sliced cucumber and carrot bits.
Use a vege peeler to skin the cuke then peel slices thinly for the roll. Leave some of the skin on the cuke so that your slices will have both dark green and lighter green color.
Add the carrots bits. Cut small carrots into little bits.

Next, add a piece of saran wrap over the roll to keep the toppings in place, and keep your hands from sticking to the roll when cutting it.

Using the bamboo mat, firm the toppings to the roll.

Now we can cut the roll.

Cutting the roll is easy; just cut it in half, then half again. You can cut off the uneven ends also.

After the roll is cut, remove the saran wrap slowly, so the roll, toppings, and pieces stay intact.

Garnish The Roll
Place the roll pieces into your serving dish, then add the teriyaki sauce. Drizzle the sauce over the top of the cucumber and carrot bits.

To have a thin looking drizzle use a icing drizzler spoon or a squeeze bottle.

Garnish the serving dish with a dab of wasabi, and a piece of pickled ginger.

You can also cut the roll first, then add the toppings. Depending on the toppings being used, this is easier for some specialty rolls.

If adding the toppings after you've cut the roll - place toppings on the roll, place saran wrap over the toppings, then use the bamboo mat to firm the toppings to the sushi roll. This is recommended for toppings of: avocado, or thinly sliced cucumber or rolls that have veges like sliced mushrooms.
