Learn Cutting Technique For Rolled Sushi(Sushi Maki)
The Bamboo Mat
Rolling a sushi roll is easier if you use a bamboo mat known as a makisu.  You place your half sheet nora on the mat and then use the bamboo mat to help 
roll the nora sheet with the rice and ingredients.  

The bamboo mat is also used to firm the roll once it has been rolled.  To do so, simple place the 
mat over the roll and with both hands firmly press the bamboo mat and the roll together. Make sure you have covered your 
bamboo mat in saran wrap.

 Depending on the type of roll you rolled, and your topping, you may want to place a sheet of saran wrap over the roll.  This 
helps to keep the topping in place as you cut, and overall, makes for a nicer roll look.
(Rolls that have the 'rice on the outside' are much easier to roll using a bamboo mat.)
Once you've rolled your sushi roll, just place the saran wrap over the roll(just enough wrap to cover the roll) then use your bamboo mat to firm the wrap to the roll.  
Now remove the bamboo mat slowly, make sure the saran wrap stays with the sushi roll.
The bamboo mat also helps to shape certain toppings, like avocado.  After you have placed your avocado on the sushi roll, place saran wrap over the avocado, then use

Buy A Good Knife
You need a sharp knife for cutting the rolls.  A chef knife or santoku knife is recommended.  I use a santoku 5" blade for cutting rolls, and i find it works the
best. I bought it at Walmart for about $7.
 You also need to place the knife in cold water before you cut - this keeps it from sticking to the sushi rice when 
cutting. After each couple of cuts, remove the sticky from the blade, then place the blade in cold water again.
Cutting The Sushi Roll
Now, your ready to cut your sushi roll.
 
Cut the sushi roll in half.  Then half again, and half again, usually making for 6 -8  pieces.  If hosomaki roll, you might have 6 pieces.  It really depends on 
the cut you make; thinner cuts gives more pieces.
You can cut off the uneven ends  first or after you cut the roll in half.

Cutting the Roll With Nora on Outside


It doesn't matter if your cutting 'rice on outside' roll, or 'nora on outside roll, the cutting technique is the same for both roll types.

Cutting Futomaki Roll
Preparing the nora for futomaki rolls is different than the maki roll.  
  First we place the nora lengthwise on the bamboo mat.
Next, add the rice to the nora, cover all areas except for a small area at the opposite end of your nora sheet.  This allows the rice and nora to mesh together better.

Next, add your ingredients as shown in this photo.
 
Once rolled, cut the futomaki roll.
 
 
You can cut them in three to six pieces, cutting them as thin as you like. Dip your knife blade in water before cutting the roll.

Cutting Deep Fried Sushi Rolls

  The fried roll is cut the same way any sushi roll is; usually first cut in half, then halved again.
You can add saran wrap over the roll before you cut it, but it is not necessary.
 Once it is cut, you usually have 6 pieces; if you cut them thin you can have additional pieces. 
We usually do not cut off the ends on a deep fried roll because the entire roll is coated in batter and panko flakes; so the uneven ends won't be seen.
