For seasoning the noodles, there are a variety of choices: from pre packaged seasoning, (common with ramen noodles), to using dashi(Japanese broth), or soy sauce (shoyu) and sesame oil are also popular. Japanese furikake seasonings are also used and available in variety of flavours.
The most popular dashi used is 'dashi bonito' a fish flavour broth, 'shiitaku dashi', a mushroom vege flavour broth, and 'kombu dashi', a vegetable broth also. You can also make your own from the many seasonings available at the Asian market.
Fish toppings can include: cooked plain shrimp, butterfly breaded shrimp, or shrimp tempura. Meat toppings like chicken, pork, beef, are popular, as are dumplings, made with chicken, pork, shrimp, or
a mixture of meat/fish and a vege like cabbage.
