How To Make Sushi Specialty Roll: Alfafa Shrimp Roll
Ingredients for this alfafa shrimp roll are: breaded cooked shrimp, alfafa sprouts, teriyaki sauce; and topped with shrimp, teriyaki sauce and Japanese mayo.
For this roll we are using
brown sushi rice.

This roll is made with the rice on the outside - uramaki roll.
To make this roll add a 3/4 sheet of nora to your bamboo mat.
Adding the Rice
You have to measure out the amount of rice, About 1 cup is enough for a 3/4 sheet of nora.

Once you've added the rice, flip over the nora so the rice is facing the bamboo mat.
Because we added saran wrap to our bamboo mat the rice won't stick to it when we roll the sushi roll.
Add The Ingredients
Alfafa sprouts - alfafa sprouts are at the produce section of your local grocery store. Use about 1/4 cup for the roll. Add to the nora sheet width wise.
Shrimp - the breaded shrimp has to be cooked in the oven. Buy the frozen butterfly breaded shrimp. Place 6 shrimp on a cooking pan and bake for 10-15 mins at 450.

Once cooked, cut them width wise - 2 pieces per shrimp. That will make 12 pieces for the roll.

Then put 4-5 pieces on the nora as shown in this photo. Add some
teriyaki sauce on the shrimp and alfafa sprouts.

Roll and Cut The Roll
Now, roll the nora with the bamboo mat.

To cut the roll: first place saran wrap over the roll so your hands won't stick to the rice when cutting it. Cut the roll in half, then cut off the uneven ends, then cut the roll in halves again.
You should have 6 pieces, or more if you cut them thinner.

Once the roll is cut, you can firm the roll if it looks uneven. Just use the bamboo mat, and some saran wrap. Put saran wrap over the roll.
Place the bamboo over the saran wrap and with your hands flatten it firmly to the roll. Then remove the saran wrap slowly.
Place roll on serving dish. Use saran wrap or dip your fingers in water before moving the roll, so your hands don't stick to the rice.
Garnish The Roll
Add the remaining pieces of breaded shrimp to the top of the roll. Then add the teriyaki sauce and Japanese mayo.
Add a dab of wasabi and pickled ginger to your serving dish.
