HOW TO MAKE SPICY ASIAN SALAD DISH


BUY THE INGREDIENTS
To make this vege dish you will need:

Asian lettuce(aka chinese lettuce), shredded seaweed strips, cucumber, alfafa sprouts, wakame furikake seasoning flakes, sirrachi spicy seasoning spice or sirrachi mayo, and sesame oil or Japanese mayo.

The asian lettuce(Japanese or Chinese) you can buy at the Asian market that sell fresh veges and some local grocery stores also sell it. It is sold by weight usually.

Seaweed (nora) you can just cut strips from a nora sheet(used for rolling sushi). Grocery stores that sell fresh sushi usually sell nora sheets in packages of ten. You can also buy the nora pre cut into strips at the Asian market.

The seasoning flakes, furikake wakame, are at Asian grocers. They are in a shakable container; and are a type of seaweed, and quite salty. They are usually a reasonable cost.

Wakame flakes is great for adding flavour to salads, rice, or noodle dishes. If you prefer, you can also buy packaged wakame strips or pieces at the Asian grocer, although i find the wakame furikake flakes are ideal for just adding a tad of flavour. I usually add a half teaspoon.

The sirrachi mayo or sirrachi seasoning are at your local grocery store.

The sirrachi mayo is usually at the rice aisle or International Foods section, at Sobeys, Walmart, and Atlantic Superstore Halifax. Superstore also has Japanese Mayo at their International Food aisle. This mayo is often used on restaurant made Sushi Maki rolls and as a garnishing ingredient on the Dynamite Roll; my favourite!

Sirrachi seasoning you can find with the spices, at the baking items section of most stores.

Cucumber, and alfafa sprouts are sold at the produce section of your local grocery store. Alfafa sprouts are good for salad vege dishes, and also great on sandwiches.

PREPARE THE VEGETABLES
To prepare the lettuce: just use 2 leafs and rinse them in water, then put them on paper towel to dry somewhat. Cut them into small pieces for the salad dish.
You can optionally use iceberg or leafy green lettuce which are usually at local brand stores like Sobeys and Walmart, or your fav local asian store.

To cut your seaweed strips just use a sheet of nora and scissors to make sliced strips. About 15 or so is good.

Peel the outer layer of a cucumber and make about a half dozen slices.

Measure about 1/2 cup of alfafa sprouts for the vege dish.

MAKE YOUR DISH
Put the cut lettuce into your serving dish.

Add the sirrachi seasoning and sirrachi mayo to the cucumbers in the dish. The seasoning is quite spicy hot so just a tad is all that is needed. The sirrachi mayo isn't quite as potent as the seasoning, but still very spicy. You may prefer to use the sirrachi mayo only. It is more popular and used on sushi rolls.

Add the seaweed strips to the vege dish.

Add the alfafa sprouts, and sprinkle some wakame flakes on the vege salad, about a half to 3/4 teaspoon.

Add some sesame oil, or Japanese mayo to the salad if you like.

SELECT YOUR WINE
White dry wines tend to go nicely with salads with greens and with a mild dressing. Wines such as a Sauvignon Blanc, Pinot Grigio, or just a white blend are good matches.

However, if your using a spicy or hot dressing; as is the case for our spicy asian salad, then a sweet white wine is a good choice. The slightly sweet tasting wine will pair nicely with the hot n spicy taste from the dressing. For a slightly sweet wine, also known as an off-dry style (medium dry), we have several choices from different wine regions. Riesling is a good choice, and several regions have the off dry style, some are:

Planters Ridge Riesling, Citrus, Melon, Pear flavours, from Canada.
Kung Fu Girl Riesling, Citrus, Melon, Peach flavours, from USA.
Anselmanns Riesling, Apple, Apricot, Citrus flavours, from Germany.

If you prefer a medium dry Chenin Blanc:

Bougrier Vouvray, Honey, Peach, Pear flavours, from Loire Valley France
