HOW TO MAKE SHRIMP TEMPURA APPETIZER

Ingredients
For this appetizer dish, you will need: frozen tempura shrimp, cucumber, juliene carrots, slice of fresh lemon, grated ginger, and shrimp tempura dipping sauce.
BUY THE SHRIMP

Frozen tempura shrimp can be bought at the grocery store in the frozen fish section. Walmart also sells tempura shrimp. The cost is about $10 per package, for about
15 shrimp.
Shrimp tempura dipping sauce- can be bought at Asian grocery store. Grocery stores usually do not sell it.
BUY THE VEGES

Julien carrots can be bought at most grocery stores, or you can cut them julien like yourself.
Cucumber is available at all grocery stores. Ginger is available at all grocery stores, just buy a chunk and grate it; about a teaspoon is good.
To spiral the cucumber use a vege spiral. Walmart usually has them with the kitchen utensils.
TEMPURA DIPPING SAUCE
Tempura dipping sauce can be bought at the Asian grocer for a few dollars. Then just add it to a small dipping dish to serve with your appetizer.
COOK THE SHRIMP
To prepare, just bake 5 shrimp in the
oven at 450 for about 15 mins. Flip the shrimp about 6 or 7 mins into cook time.
Add To Serving Dish and Garnish
Add the cooked tempura shrimp to the appetizer serving dish.
Add the garnish of cucumber, carrots, slice of lemon, and grated ginger on the side of the serving dish. Pour some tempura dipping sauce into a small serving dish.
MAKE YOUR SHRIMP TEMPURA FROM FRESHLY PREPARED SHRIMP
You can make your own shrimp tempura.
If you straighten a shrimp(either pre cooked frozen-thawed or raw shrimp), then cook it in tempura batter, it is know as 'shrimp tempura'.
If you butterfly a shrimp and then batter/cook it with tempura batter, it is known as 'butterfly shrimp tempura'.
When you buy pre cooked frozen plain shrimp, they typically look like the shrimp in this photo. You can buy them in a package, containing many shrimp or in a shrimp ring. Either can be used.
The shrimp size is stated on the package using a number, or shrimp rings usually state size as small, large, medium, jumbo.

To make your shrimp tempura you need to buy the pre cooked plain frozen shrimp, large or medium size, thaw them in the fridge for a few hours, then you butterfly each shrimp.
You can also make shrimp tempura with raw shrimp. For this recipe tutorial, we are using pre cooked frozen shrimp.

If you prefer, you can have the shrimp look like a strip(tall), with somewhat of a curve.

To do so, the shrimp must be slightly straightened, use your hands to firmly straighten each shrimp at its two curves.

MAKE THE TEMPURA BATTER
Tempura Batter you can either buy it at the Asian grocery, or make your own. Grocery stores usually don't sell it, and Walmart may have it; look for it in their Asian foods
section.
It is about $3-4, per regular size box.
To Prepare the Store Bought Batter:
Put the amount of water you will need for the batter mix into freezer to get very cold almost ice like.
Measure out the amount of batter mix your going to use.
Follow the directions on the tempura package for amount of water and mix to use.
Mix Batter into The Water
Put the very
cold ice water in a bowl.
Sprinkle the batter powder mix on top of the water evenly. Then, use a chopstick or small wire whisk to quickly mix the flour into the water.
Only mix till flour dissapears into the water and to get rid any large flour lumpies. Small lumpy flour bits in batter is good.
Cooking Tips
Prepare your ingredients for cooking before
making the tempura batter.
Make the batter just before deep frying so the batter is very cold going into the deep fryer
( This is what gives the Tempura batter its textured look and taste)
Keep the batter (bowl with the batter) in the freezer while your batches of shrimp are cooking in the fryer.
BATTER and COOK THE SHRIMP
Next, batter each shrimp, and
cook them in the deep fryer for about 2 minutes each. Don't put them in a fry basket; just let them cook separately in the fryer. With your fingers, hold the shrimp by the
shrimp tail end, batter each one, then put them quickly into the fryer to cook.
Because these shrimp are pre cooked, once they are thawed they are ready to eat; so they don't require
much cook time in the deep fryer. Just to slightly brown the batter.
If you want to use raw shrimp, you can buy them at the 'fresh fish' counter at your local grocery store.
Deep fry each tempura item until just slightly colored or about 2 minutes. If your using raw shrimp, you will need to cook them longer in the fryer.
Garnish Your Dish
Add your tempura shrimp to your serving dish; add fresh sliced lemon, ginger, and spiral cucumber to garnish. For dipping, add a side of tempura dipping sauce, or soy sauce.
Wine Selection
Our ingredients in this recipe are shrimp, a shellfish, and the batter, a starch. The shrimp tempura is not spicy or hot; at least not of themselves. Our
dipping sauce- tempura or soy sauce, is slightly spicy and not hot. So, we can choose a wine that goes with shrimp (shellfish), and starch.
From Africa, Nederburg Pinot Grigio, Citrus, Crisp, Pear for its' notes, priced at $13. And from Australia, a Chardonnay, Yellow Tail Chardonnay,
with Melon, Peach, and Toasty for its notes, priced at $11.
If you decide to dip your shrimp tempura in a really hot or spicy sauce, you can also choose a more off dry wine; like a Pinot Grigio with an off dry body (medium, medium dry)
or any White Blend with an off dry body as well. The off dry body is a tad sweet and this pairs well with hot tasting sauces or hot n spicy tastes added to or in food.
