SHIITAKE DASHI WITH MISO

To make this shiitake dashi miso recipe we are using shiitake mushrooms (dried packaged), organic white type miso paste, soy sauce; and for the added vegetables we will use spinach, seaweed(nora) strips, sliced water chestnuts, shiitake mushrooms, green onions, and wakame seasoning flakes.
Buying The Ingredients
Green onions, canned water chestnuts, soy sauce, spinach can be bought at your local grocery store. The other ingredients at the Asian grocer. For canned chestnuts buy them sliced. Spinach, buy the small leaf pre washed and packaged. Green onions at the produce section, you'll need 2 stalks. The seaweed strips you can buy at Asian market already cut; ask for 'shredded seaweed'; or just cut your own from sheet of nora as shown in photo.

Cut the nora into strip like pieces using a nora sheet; about a half dozen is good.
Cut 2 green onion into finely chopped pieces

Wakame flakes can be added to rice, noodle, or any dish that you want to add flavouring to. They are known as furikake seasonings, and at the Asian market, they are sold in a seasoning like small container.

Wakame is a seaweed flavour, that has been dried into flake like pieces. Their sodium content is about 400mg per tablespoon, however, because they are so salty; you only need to add a small amount. I usually use a teaspoon on rice, noodle, and vege salad dishes I make.

Miso - you can buy the organic or non organic white type. Non organic is cheaper. You will need 2 teaspoons for our shiitake dashi miso.

Shiitake Mushrooms - buy them pre packaged and dried. Water will be added to them to get the seasoning flavour of the shiitake mushrooms. You can also buy them in bulk packages(bit cheaper), however they may not be washed. Look for a brand name on packaging and that has pre washed them. Usually cost about $5 for a package.
Prepare The Shiitake Mushrooms

To prepare the mushrooms put about 12 or so mushrooms into a container. Cover them with warm water. Use 2 and 1/4 cups of water. Leave them for about 1 hour.

Then remove the mushrooms from the liquid. Put the liquid through a fine strainer. Then put the liquid into a medium pot on the stove. Slice the mushrooms to add to your broth(about 6 of them); discard the stems.
Add The Vegetables

Now, add the vegetables to the pot as well. Add the finely chopped green onions(use 2), and finely chopped spinach(1 cup), canned sliced water chestnuts(1/4 cup), the sliced shiitake mushrooms(about 6), wakame flakes(1 teaspoon), and strips of nora- seaweed, about 6.
Adding The Miso Paste

Now we add the miso paste to the dashi(broth). Before we add it we must mix it with a liquid to make it smooth. Doing so makes it easier to add to the broth. You can use water or water and soy sauce. We will use 2 teaspoons of miso paste, and mix it with 1 teaspoon of water, and 1 teaspoon of soy sauce.

Mix them until they are smooth and paste like as shown in this photo.

Then place this paste on a cooking spoon and put it into the dashi broth in the pot and swirl it around until the paste is absorbed into the dashi broth. Do not add the miso paste to a broth water that is boiling. The water can be hot, warm, just not boiling.

Once your miso paste is mixed with the shiitake dashi; you have made shiitake dashi miso or shiitake dashi with miso.

In addition to vegetables, you can also add meats like chicken, pork; or fish like shrimp.

Shiitake dashi can be used just as a broth and added to dishes like noodles; or ingredients can be added to it;(miso,veges) and then eaten as a soup - miso soup.

On sushi menus, miso soup is a popular food; and usually served with just a few vegetable ingredients; although additional ingredients can be added if requested.
