You can also use potato starch - katakuriko(potato starch) - to coat the pieces, also at the Asian market. I tryed the potato starch coating, and i much prefer the wheat flour coating.
Minced garlic, grated ginger root or minced ginger, soy sauce, salt, pepper, spring water, chicken thighs, canola oil, all available at local grocery stores.
Cooking sake and sesame oil can buy at Asian grocer that has Japanese foods.
Make your chicken marinate sauce; add 3 tablespoons soy sauce, 1 tablespoon cooking sake, 1 teaspoon minced garlic, 1 teaspoon grated root ginger or the minced ginger, and 1/2 teaspoon sesame oil. Put all these ingredients in bowl and mix well.
On a dinner plate put 3/4 cup unbleached wheat flour or the Japanese wheat flour karaageko, 1 teaspoon pepper, and a sprinkle of salt; and mix all together well using a fork.
Place your cut chicken into the bowl of marinate sauce. Stir the chicken into the marinate sauce till all chicken is coated. Cover the bowl with foil or saran wrap. Put in fridge for at least 1 hour.
Remove chicken from fridge, and in a frypan put 6 tablespoons canola oil. Fry on medium high heat. Coat each chicken piece by first dipping in spring water bowl then into the wheat flour mixture, then fry in fry pan. Cook each side about 5 minutes till the flour browns.
You can also cook in the deep fryer; same process, just
coat each piece, then place in the fry basket; and cook 375 fryer temperature till browned. Cook only a few pieces at a time, half dozen or so, so fryer oil keeps its temperature.
