HOW TO MAKE TEMPURA ICE CREAM CAKE

BUY THE INGREDIENTS
For this dessert recipe you will need: 6 cubed pieces of pound cake 1.5 x 1.5 inch sizes; 3/4 cup tempura batter mix, 1/2 cup ice cold water, mocha ice cream, chocolate syrup, cherries. This recipe will make 2 servings.

Mocha ice cream, chocolate syrup, cherries, pound cake you can buy at your local grocery store. The tempura batter mix you can get at your local Asian grocery. Grocery store usually do not sell it. It cost about $4 for a box. Tempura batter has a very light texture, and it is very low in sodium, making it great to use as a batter on any foods you enjoy.

PREPARE THE INGREDIENTS
For the pound cake you can use plain, cherry, gumdrop, whatever you like. Cut the pound cake into cubed pieces about 1.5 inch sizes.

Turn your deep fryer to 375 to heat.
Making Tempura Batter Mix
Prepare your tempura batter. Tempura store bought batter is pre mixed, all you do is add the cold water. The water needs to be very ice like cold. Just place the amount you will need in the freezer for 20 or so minutes. For this recipe, we will use 1/2 cup of water and 3/4 cup of batter mix. For mixing the batter there is about 1/3 more flour than water used.

Put your cold water into a bowl, sprinkle your flour over the water, then quickly, using a knife or chopstick, mix the flour into the water, only until the flour disappears and to get rid of any large lumpies. Small lumpies are good for tempura batter. Less mixing the better. Now, your ready to coat your cake pieces.

Dip each cake piece - into the batter mix, then fry in the fryer. Do not use a fryer basket just put each coated cake piece into the oil separately. Use a fork or metal vegetable spoon to put them into the fryer. Fry them for about a minute and a half, then remove them and place on paper towel for a few minutes. Then put them all in the fridge to chill somewhat for about 20 minutes.

Tips
Make sure your fryer is ready before you mix the batter. When frying with tempura batter the batter needs to be very cold (hence the ice like water) going into the fryer, so best to make it just before you deep fry your ingredients(cubed cake pieces). Only put a few in the fryer at one time, thus the fryer oil will maintain its temperature.

MAKE YOUR DISH
Add three tempura cakes to your serving dish. Put your mocha ice cream on the dish as shown in the photo. Pour the chocolate syrup over the ice cream and tempura cakes. Add a couple of cherries.
