How To Make, Sushi Nigiri Tuna
Nigiri tuna is made by putting sliced sushi grade raw tuna on a portion of rice that has been shaped.
To make sushi nigiri tuna you will need these ingredients: sushi rice, and sushi grade raw tuna, soy sauce, wasabi.
Buy The Ingredients
Sushi rice, short grain white rice, is available at your local Asian market, and grocery stores may sell it, especially those that sell fresh sushi. Walmart also
sells the Kokuho brand for about $6 for a 1kg bag.
You can buy the sushi grade tuna at your local fish market. It is frozen and is a block of tuna known as 'saku tuna', block of frozen sushi grade tuna.
Prepare The Ingredients

Cutting the Tuna -
This is a photo of an actual block of sushi grade tuna.

Remove the tuna from packaging and place in covered container in the fridge to thaw somewhat, about 3 hours.
It is easier to cut into slices if it is still a tad frozen.

Use a sharp chef or santoku knife to make the slices; the knife in this photo is a santoku knife that i got at Walmart.

When cutting:
cut it against the grain at a degree of 30(the grain is the lines that you see in the tuna).
cut it 1/4 of an inch,
cut the tuna by pulling the knife towards you in one slice
This is the proper cutting technique for sushi grade tuna, and this will also give you proper slices to use for; sushi - maki tuna rolls, sashimi tuna, nigiri tuna, or making tuna rice bowl.

Shape The Sushi Rice
Next, prepare the rice for the saku tuna.
It is easy to do, simply put cooked sushi rice in the palm of your left hand and form the shaped rice. You use your thumb(right hand) as your guide: just make the rice no longer than length of your thumb, and
no wider than about half width of your thumb.
You can also buy sushi nigiri molds which are sold online at Amazon.ca and your local Asian grocer may sell them.
Next, we put the wasabi paste on the rice.
Put a dab of wasabi paste on top of each one as shown in this photo. Wasabi is added for flavour and it helps to keep the topping in place.
Wasabi paste is very strong tasting, so just a dab is all that is needed.
Add Tuna To Rice
Now add the freshly sliced saku tuna to the top of each nigiri shaped rice.

Add Dipping Sauce and Wasabi
Add dipping sauce and wasabi to your serving dish. You can use soy sauce or a fish dipping sauce. You can buy Japanese fish dipping sauce at the Asian grocer.
